This was is what I call a glorified grilled cheese. It is a three cheese blend of chipotle gouda, baby swiss, and mild cheddar with slices of chorizo sausage on grilled garlic infused ciabatta.It was delicious, but next time I may make it into more of a grilled BLT by adding some spinach and tomato for a little more flavor.
